Coming up with fun new dinners every night can be tiring. It’s crazy how the family wants to eat every day, LOL. I have my tried and true favorites that I make on a regular basis, but sometimes I need something new. Something easy.
And preferably something big enough to leave me some leftovers for lunch the next day.
That’s why I am sharing some easy casserole recipes using ground beef. These make an easy weeknight meal for busy school nights when you need to get everyone to the dinner table in a hurry.
Our favorite ground beef casseroles are the ones that have flavors my family already loves: tacos, cheeseburgers, and spaghetti and meatballs. So I add these to my dinner rotation more often. But when you want something new, I have you covered!

How long do they last?
Store any leftovers in an airtight container or cover tightly with plastic wrap for up to 4 days in the refrigerator. Reheat in the oven or microwave until warmed through.
Can I freeze them?
Most of these casserole recipes you can freeze. The only ones I might be careful with are the ones with pasta like spaghetti or egg noodles. The noodles are small and can lose their texture when you thaw them. Best to undercook the noodles a bit so they cook perfectly when you bake it.
For easier prep, make the ground beef mixture in large batches and freeze in one pound portions. Then pull out and mix with the rest of the ingredients. Bake and enjoy!
Be sure to use a freezer safe baking pan that can go directly to the oven. Or use a disposable pan made from aluminum foil. Then you can just toss the container and not have to wash dishes.
Best Casserole Dish to Use
Most of the recipes use a 9×13 baking dish, that is oven-safe. If you have a smaller household, you can always separate the recipe into two smaller dishes (8x8inch). Bake one to enjoy now and freeze one for an easy dinner when things get hectic. The baking time will need to be adjusted.
Most of these recipes can also be made in a large skillet (10-12 inches) and then baked. Just be sure your skillet is oven-safe.
