Whether you need something to make for special occasions or you just want an easy recipe for busy days, you have to try this slow cooker taco potato casserole.

This tasty casserole is a delicious way to enjoy your favorite recipes for tacos but in a crockpot for an easy family dinner.

  • Lean ground beef – I recommend choosing a lb ground beef, but you can substitute for any ground meat.
  • Taco seasoning – Use a 1 oz packet taco seasoning, or make your own homemade taco seasoning.
  • Minced garlic – Swap minced cloves garlic for garlic powder as necessary.
  • Frozen diced potatoes – I recommend the potatoes with diced onions and peppers, or hash browns, tater tots, and sweet potatoes are great substitutes.
  • Condensed cheddar cheese soup – Replace the 10 .5 oz cheddar cheese soup with cream of mushroom soup or heavy cream as needed.
  • Salsa – Red or green salsa work well in this recipe.
  • Monterey jack cheese – Swap for cheddar, pepper jack, or any cheese you prefer.
  • Pantry staples – Beef broth.

How To Make Crock Pot Beefy Potato Taco Casserole

  1. In a large skillet, brown beef over medium high heat until no longer pink. Drain excess oil from cooked ground beef.
  2. Add 1 cup water or broth, minced garlic, and taco seasoning. Cook over medium-high heat for 1 – 2 minutes, stirring occasionally.
  1. Add beef mixture to the bottom of the slow cooker, along with potatoes, cheese soup, salsa, and ½ of shredded cheese. Stir to mix.
  2. Leave on low for a cooking time of 2 – 3 hours. Before serving, add remaining cheese and cover for 5 minutes or until melted. Serve with fresh cilantro and sliced green onions.

What should I serve my crockpot taco casserole with?

This cheesy beef and potatoes recipe goes well with anything that you would normally serve with your tacos, like sour cream, guacamole, and tortilla chips.

For sides that go with this hearty taco casserole, I like to serve a little bit of Mexican street corn along with a big serving of rice and beans.

How can I store leftovers from my casserole?

The best parts of this slow cooker casserole recipe are how little prep time it takes and how easy it is to store once you’re done!

After everyone is finished, you can transfer any remaining ground beef casserole into an airtight container and save in the fridge for up to 3 days.

When you’re ready to eat your leftovers, all you need to do is place a serving into an oven safe dish and bake for 10-15 minutes at 350F or until heated through.

The cook time may vary slightly with different ovens.

Can I freeze my casserole?

Yes, this slow cooker beef casserole can be frozen and saved for up to 3 months.

I recommend following the recipe up until you put it in the oven, and instead moving it to a freezer safe container.

Place the casserole in the fridge until you need it. Once ready, move your casserole into the slow cooker and leave on low for 4 – 5 hours, until warmed.

If frozen, thaw overnight in the refrigerator before adding to the slow cooker.

  • 1 pound lean ground beef
  • 1 cup water or beef broth
  • 1 (1 ounce) packet taco seasoning
  • 1 teaspoon minced garlic
  • 30 ounces frozen diced potatoes
  • 1 (10.5 oz) can condensed cheese soup
  • 1 cup salsa
  • 2 cups Monterey Jack Cheese, shredded

Instructions

  1. In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess liquid.
  2. Add 1 cup of water, minced garlic, and taco seasoning. Cook for 1-2 minutes while stirring.
  3. To a slow cooker, add the ground beef mixture, frozen potatoes, cheese soup, salsa, and ½ the shredded cheese. Stir to mix.
  4. Cover and cook on low for 2-3 hours.
  5. Before serving, add the remaining cheese and cover for 5 minutes to melt.
  6. Serve with fresh chopped cilantro or sliced green onions.

Notes

  • Not a Mexican food fan? Try switching out the taco spices for italian seasoning, and spreading tomato sauce on top of the potatoes for an Italian feel.
  • This can easily be made in an instant pot too.
  • If you can’t find the potatoes with onions and peppers, add 1 small diced onion when cooking the ground beef.
  • No taco seasoning? Try a mixture of chili powder, onion powder, and black pepper.
  • Warm up your casserole’s leftovers in the microwave by placing it on a microwave safe dish and heating for 1 - 2 minute intervals until completely warm. 
  • Try topping your casserole with green chilis rather than green onions for a little extra spice!
