Doritos Casserole with Ground Beef
This easy Dorito Casserole full of tender ground beef, veggies, and lots of cheese. Perfect for a busy weeknight and especially Taco Tuesday.
Dorito Taco Casserole Recipe
I’m a sucker for anything that resembles a taco. No matter what day of the week it is, I can eat tacos or Mexican food in general. So when I am having to make my meal plan for the week I need at least one dish that has Mexican flavors.
It also has to be something the whole family will eat. In my house, you eat what I make or you make your own:) I don’t have time to be a short order cook, am I right?
That’s why you are going to love this recipe just as much as I do. What’s not to love about using budget friend ground beef, lots of veggies, loads of cheese, and all of it topped with crunchy Doritos?

Ingredients Needed
Ground beef – I like to use 93/7 lean ground beef. Substitute ground chuck, ground chicken, or ground turkey if needed.
Seasoning – Homemade taco seasoning or substitute fajita seasoning in a pinch.
Soup – Cream of chicken soup, cream of mushroom soup.
Vegetables – Canned black beans, corn, diced tomatoes with green chiles.
Cheese – Shredded cheddar cheese. Substitute pepper jack cheese for more kick.
Chips – Nacho cheese Doritos, lightly crushed. Substitute your favorite flavor like Cool Ranch doritos.

How to Make Doritos Casserole
First: Preheat the oven to 375°F. Grease a 9×13-inch casserole dish with cooking spray.
Second: In a large skillet, brown ground beef over medium heat until no longer pink. Drain excess fat. Stir in the taco seasoning mix, soups, and canned ingredients. Bring the mixture to a simmer and cook for 5 minutes.
Third: Transfer half of the ground beef mixture to the prepared baking dish. Sprinkle 1 cup of cheese over the beef mixture.
Crush the Doritos lightly and spread half of them evenly over the cheese layer.
Fourth: Repeat layering process again with the meat mixture, crushed Dorito chips, and top with cheese.
Fifth: Bake the casserole for 25-30 minutes, or until the cheese is melted and bubbly. Remove and let cool for 5-10 minutes before serving.

How long does it last?
Store and leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.
If you want to make it a few days ahead of time, assemble the casserole without the Doritos and store it covered in the refrigerator. Add the Doritos and remaining cheese just before baking.
Can I freeze it?
I do not recommend freezing this. The chips can become soggy when thawed and reheated, which would changes the texture. It’s best to be enjoyed fresh.
Serving Suggestions
This is Dorito casserole recipe is really a complete meal, but if you want to stretch your budget, add some side dishes. Some of my favorites are this fiesta salad, Mexican rice, and refried beans.
Add some color by topping with sliced green onions, chopped, or fresh cilantro, or green salsa. Cool it down with some sour cream!
Just think of your favorite taco toppings and you are ready to go. I’m going with black olives and extra chips on mine 🙂

Tips for No Leftovers
- Substitute the ground beef for ground turkey or shredded chicken. Or use a rotisserie chicken for easier prep.
- Gently crush the chips by hand or in a sealed bag with a rolling pin. Don’t crush too much!
- If it’s too spicy, substitute the diced tomatoes and green chilies (Rotel) with plain diced tomatoes.
- Add extra veggies like diced bell peppers, carrots, or zucchini.
- Use fresh tomatoes instead of canned, just add 1/2 cup water to the mixture.
- Stir in some sour cream for a creamier texture.

Ingredients
- 1 pound ground beef
- 1 ounces taco seasoning
- 10.5 ounces cream of mushroom soup
- 10.5 ounces cream of chicken soup
- 15 ounces black beans drained and rinsed
- 15.25 ounces corn drained
- 10 ounces diced tomatoes with green chiles undrained
- 2 cups cheddar cheese shredded, divided
- 9.25 ounces nacho cheese Doritos lightly crushed
Instructions
- Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray.
- In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat.
- Stir in the taco seasoning mix, cream of mushroom soup, cream of chicken soup, black beans, corn, and diced tomatoes with green chiles.

- Top the casserole with the remaining crushed Doritos and the remaining 1 cup of shredded cheddar cheese.
- Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let the casserole cool for 5-10 minutes before serving.
