Instructions
Preheat the oven to 375°F. Grease a 9x13-inch baking dish with cooking spray.
In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat.
Stir in the taco seasoning mix, cream of mushroom soup, cream of chicken soup, black beans, corn, and diced tomatoes with green chiles.
Bring the mixture to a simmer and cook for 5 minutes.
Transfer half of the ground beef mixture to the prepared baking dish.
Sprinkle 1 cup of the shredded cheddar cheese over the beef mixture.
Crush the Doritos lightly and spread half of them evenly over the cheese layer.
Pour the remaining ground beef mixture over the Doritos and spread it out evenly.
Top the casserole with the remaining crushed Doritos and the remaining 1 cup of shredded cheddar cheese.
Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let the casserole cool for 5-10 minutes before serving.
Notes
Substitute the ground beef for ground turkey or shredded chicken. Or use a rotisserie chicken for easier prep.
Gently crush the chips by hand or in a sealed bag with a rolling pin. Don't crush too much!
If it's too spicy, substitute the diced tomatoes and green chilies (Rotel) with plain diced tomatoes.
Add extra veggies like diced bell peppers, carrots, or zucchini.
Use fresh tomatoes instead of canned, just add 1/2 cup water to the mixture.
Stir in some sour cream for a creamier texture.
