I usually make this crock pot corn casserole recipe for Christmas Eve to save oven space, but it’s also become a regular of my family’s main dishes during the week. 

This tasty dish can be filed under healthy recipes for your family, thanks to its simple, wholesome ingredients.

Whether you’re looking for something to serve at your next holiday meal or you want the perfect side dish for a dinner party, this original recipe for corn macaroni casserole is a must-try.

Ingredients Needed

  • Corn – Use frozen whole kernel corn or drained cans of corn. Cooked fresh corn kernels will also work.
  • Creamed corn – I recommend using two cans of cream style corn, undrained.
  • Velveeta cheese – Swiss, cheddar, and mozzarella cheese are all good replacements. 
  • Butter – Unsalted butter works best, but salted butter is fine.
  • Uncooked macaroni noodles – Elbow macaroni is my favorite but use any small shape. 
  • Cheddar cheese – Replace with Monterey jack, pepper jack, or the cheese of your choice.

How To Make Slow Cooker Macaroni Corn Casserole

  1. In a slower cooker or crock pot, combine corn, cream corn, Velveeta, cup butter, and noodles. Give a good stir to combine.
  2. Cover and cook on high for 1 hour, stirring twice. Reduce heat to low and leave in the oven for cook times between 3 – 4 hours.
  3. Top with shredded cheese. Cover until cheese melts.
  4. Uncover and garnish with fresh parsley, green onion, or salt and pepper. Serve warm.

Can I make it ahead of time?

This macaroni and corn casserole is one of the great recipes for busy weeknights because it can be made ahead of time and put in the fridge or freezer until you’re ready to eat.

Follow all the steps in the recipe up until you top it with cheese. Instead, transfer it to an airtight container and store. It will stay good in the fridge for up to 3 days.

When you’re ready, transfer into the crockpot and heat at the temperature listed in the recipe card.

Whether that’s the next day or a few days afterwards, it’s always delicious.

Can I freeze it?

Casserole side dishes are some of my favorite to make because they can easy to freeze and save for another time.

Place in an airtight container and stored in the freezer for up to 2 months. 

To heat, place the servings into the crockpot on low. Add more time to make sure that it is defrosted and cooks all the way through.

Once ready, cover with your favorite cheese and toppings before serving.

What To Serve with Crockpot Macaroni Corn Casserole

Cheesy corn recipes like this one go well with any other comfort food, which is why I usually serve it with a side of green beans and cornbread made from jiffy corn muffin mix. 

If you want to spice up this casserole, you can also try topping it with sour cream, green chilies, and red pepper flakes.

  • Want a quick clean up? Try using a disposable slow cooker insert which works the same way as tin foil and can be thrown away after you use it.
  • You can bake this in the oven as well. Preheat oven to 350 degrees. Place everything in a casserole dish, cover tightly with foil. Bake for 30 to 45 minutes or until the macaroni is tender.
  • If you prefer a smoother corn mixture, you can mix your ingredients (minus your noodles) in a large bowl before slowly adding to a food processor. This will give you a consistency that is more similar to macaroni and cheese. For a creamy consistency, add in some cream cheese as well.
  • This is made in a 3.5-quart casserole crock pot bowl. Double the recipe and use a larger slow cooker.
  • Looking for more flavor? Try adding green chiles, garlic powder and onion powder into your mixture!
  • Add broccoli or green beans right into your casserole to increase your family’s daily values of vegetables.

This creamy and cheesy macaroni and corn casserole is easy to make in the crockpot, requires little hands on time and is totally delicious!

Ingredients

  • 30 ounces of corn kernels (you can use frozen or canned. Canned should be drained)
  • 30 ounces creamed corn (2 cans - do not drain)
  • 16 ounces Velveeta cheese, cubed
  • 1 cup unsalted butter
  • 2 cups uncooked macaroni noodles
  • 2 cups cheddar cheese, shredded

Instructions

  1. In a slow cooker bowl, combine the corn, creamed corn, cubed Velveeta, butter, and noodles.
  2. Stir to combine.
