Ingredients Needed
- Lean ground beef – I recommend choosing a lb ground beef, but you can substitute for any ground meat.
- Taco seasoning – Use a 1 oz packet taco seasoning, or make your own homemade taco seasoning.
- Minced garlic – Swap minced cloves garlic for garlic powder as necessary.
- Frozen diced potatoes – I recommend the potatoes with diced onions and peppers, or hash browns, tater tots, and sweet potatoes are great substitutes.
- Condensed cheddar cheese soup – Replace the 10 .5 oz cheddar cheese soup with cream of mushroom soup or heavy cream as needed.
- Salsa – Red or green salsa work well in this recipe.
- Monterey jack cheese – Swap for cheddar, pepper jack, or any cheese you prefer.
- Kitchen staples – Beef broth, salt, black pepper.

Serving Suggestions
This cheesy beef and potatoes recipe goes well with anything that you would normally serve with your tacos, like sour cream, spicy guacamole, and tortilla chips.
You can even make these fun taco empanadas with a flaky crust. The kids will love these!
For sides that go with this hearty taco casserole, I like to serve a little bit of Mexican street corn along with a big serving of rice and beans.
How long does it last?
Store any leftovers in the fridge for up to 3 days. Store in an airtight container or cover tightly with plastic wrap.
Reheat in the microwave or on the stovetop until warmed though.
Can I freeze it?
You can freeze it for up to 3 months. Prep the recipe but don’t cook it. Place the mixture in a freezer safe container and freeze.
Thaw overnight before cooking in the slow cooker.
