Cranberry Casserole Recipe

When the holiday season rolls around I always love making something with cranberries. I love the tart flavors and the way the whole cranberries burst when you bite into them.

I decided to add them to a traditional apple crisp recipe. The way the tart berries pair with the sweet apples makes it perfectly balanced.

Serve it along with green bean casserole, sweet potato casserole, butternut squash casserole and all your other favorite holiday dishes.

Ingredients Needed

  • Apples – Use green or red apples. I like red delicious or Granny Smith.
  • Cranberries – Fresh raw cranberries for this one.
  • Oatmeal – Quick cooking oatmeal, not old fashioned rolled oats.
  • Pecans – Toasted pecans or substitute almonds or walnuts.
  • Spices – Homemade apple pie spice is best.
  • Pantry staples – White granulated sugar, light brown sugar, all purpose flour, butter.

How to Make Cranberry Casserole

  1. Preheat the oven to 350F. Spray and 2 quart baking dish with nonstick spray.
  2. Combine apples and cranberries in the casserole dish. Sprinkle them with sugar.
  3. In a small mixing bowl, combine oatmeal, brown sugar, flour, pecans, and apple pie spice. Toss to combine.
  1. Pour in the melted butter and mix to make a crumble topping. Spread the oat mixture over the apples and cranberries.
  2. Cook uncovered 45-55 minutes or until top is golden brown. Remove and serve warm.

Can you freeze it?

You can freeze it baked or unbaked. Just thaw in the fridge. Bake as directed.

Best Way to Reheat It

You can always reheat it in the microwave but the topping will not be as crunchy. I suggest reheating in the oven at 350F until warmed through.

Turn on the broiler for the last few minutes to really get the topping crunchy.

Tips for the Best Casserole

  • Use a 9×9 or 11×7 casserole dish.
  • Peel and dice the apples and store in a bowl of water with lemon juice or orange juice to prevent browning.
  • Want more fruit flavor, try adding some orange zest.
  • I haven’t tried this with cranberry sauce.
  • Substitute coconut oil for butter.
  • Drizzle with a little maple syrup if having for breakfast.
  • Serve it with ice cream for a wonderful dessert like this pineapple casserole!
