Cranberry Casserole Recipe
This cranberry apple casserole is perfect for thanksgiving dinner as the a side dish or a dessert. Basically anytime during the holiday season. Perfect as Thanksgiving leftovers too!

Equipment
Stainless steel rotary peeler for vegetables
Ceramic Baking Dish, 9 x 9, with Double Handle
Ingredients

cups
peeled and diced apples
roughly 4-5 apples

cups
raw cranberries
1 ¼
cup
sugar
½
cup
brown sugar
½
cup
all purpose flour
1 ½
cup
quick cooking oatmeal
¾
cup
pecans
½
teaspoon
apple pie spice
½
cup
unsalted butter
melted
Instructions
Preheat the oven to 350F.
Spray and 2 quart casserole dish (deep 9x9 or 11x7 or something similar) with nonstick spray.
Place diced apples and cranberries in the dish.
Sprinkle them with sugar.
In a mixing bowl, combine the brown sugar, flour, oatmeal, pecans, and apple pie spice.
Toss to combine.
Pour in the melted butter and mix to make a crumble topping.
Spread the mixture over the apples and cranberries.
Cook uncovered 45-55 minutes or until top is golden brown.
Remove and serve warm.
Notes
Use a 9x9 or 11x7 casserole dish.
Peel and dice the apples and store in a bowl of water with lemon juice or orange juice to prevent browning.
Want more fruit flavor, try adding some orange zest.
I haven't tried this with cranberry sauce.
Substitute coconut oil for butter.
Drizzle with a little maple syrup if having for breakfast.
Serve it with ice cream for a wonderful dessert.
