The casserole base is the same as your normal sweet potato casserole but the topping is what really makes it.
Bits of sweet cereal mixed with light brown sugar and melted butter make a crunchy topping that is the perfect compliment to the creamy casserole underneath.

Ingredients Needed
Sweet potatoes – Mashed, cooked sweet potatoes or substitute cooked yams.
Sugar – This recipe uses light brown sugar and white sugar.
Cereal – Original Captain Crunch cereal (without crunch berries). Substitute Kix cereal.
Flour – This recipe uses self-rising flour and all-purpose flour.
Pantry staples – large eggs, vanilla extract, unsalted butter, milk.

How to Make Captain Crunch Casserole
- Preheat oven to 350F. Grease a 9×13 casserole dish.
- In a large bowl combine the sweet potatoes, both sugars, eggs, self-rising flour, vanilla, melted butter, and milk. Pour into buttered casserole dish.


- In a medium bowl, combine the melted butter, all purpose flour, light brown sugar, and cereal crumbs. Spread over the top of the casserole.
- Bake in the preheated oven for 35-40 minutes or until bubbly and the top is golden brown.
- Remove and let cool slightly. Enjoy!

How long does it last?
Store any leftovers in the refrigerator in an airtight container for up to 4 days. Reheat in the microwave or in the oven.

I could eat this all by itself but it’s delicious alongside a roasted turkey, rotisserie chicken, meatloaf, or just a crisp salad for a vegetarian meal.
