Captain Crunch Casserole Recipe

Forget everything you know about sweet potato casserole. I know that you are going to say that the gooey marshmallows on top is the best thing about it but I am about to change your mind!

The casserole base is the same as your normal sweet potato casserole but the topping is what really makes it.

Bits of sweet cereal mixed with light brown sugar and melted butter make a crunchy topping that is the perfect compliment to the creamy casserole underneath.

Give it a try and I promise you won’t miss the marshmallows!

Ingredients Needed

  • Sweet potatoes – Mashed, cooked sweet potatoes or substitute cooked yams.
  • Sugar – This recipe uses light brown sugar and white sugar.
  • Cereal – Original Captain Crunch cereal (without crunch berries). Substitute Kix cereal.
  • Flour – This recipe uses self-rising flour and all-purpose flour.
  • Kitchen staples – Large eggs, vanilla extract, unsalted butter, milk.

How to Make Captain Crunch Casserole

  1. Preheat oven to 350F. Grease a 9×13 casserole dish.
  2. In a large bowl combine the sweet potatoes, both sugars, eggs, self-rising flour, vanilla, melted butter, and milk. Pour into buttered casserole dish.
  1. In a medium bowl, combine the melted butter, all purpose flour, light brown sugar, and cereal crumbs. Spread over the top of the casserole.
  2. Bake in the preheated oven for 35-40 minutes or until bubbly and the top is golden brown.
  3. Remove and let cool slightly. Enjoy!

How long does it last?

Store any leftovers in the refrigerator in an airtight container for up to 4 days. Reheat in the microwave or in the oven.

I could eat this all by itself but it’s delicious alongside a roasted turkey, rotisserie chicken, meatloaf, or just a crisp salad for a vegetarian meal.

Tips for the Best Casserole

  • Crush cereal in a food processor or in a plastic bag with a rolling pin. You want small pieces not dust.
  • Prep ahead of time and bake when ready.
  • Leave off topping until ready to bake so it doesn’t get soggy.
  • Substitute Kix or other corn cereal for the Cap’n Crunch.
  • Add in chopped toasted pecans if you like a nutty topping.
  • Use gluten free cereal for a gluten free dish!

Ingredients

Casserole Base

  • 3 cups sweet potatoes cooked and mashed
  • 2/3 cup light brown sugar
  • 1/3 cup white granulated sugar
  • 2 large eggs lightly beaten
  • 2 tablespoons self-rising flour
  • 1 teaspoon vanilla extract
  • 1/2 cup melted butter
  • 1/2 cup milk

Casserole Topping

  • 1 cup light brown sugar
  • 1/4 cup melted butter
  • 1/3 cup all purpose flour
  • 1 cup crushed Captain Crunch cereal

Instructions

  • Preheat oven to 350F. Grease or butter a 9×13 casserole dish.
  • In a large bowl combine the all casserole ingredients. Stir until smooth.
  • Pour into prepared casserole dish.
  • In a medium bowl, combine the topping ingredients.
  • Spread over the top of the casserole.
  • Bake in the preheated oven for 35-40 minutes or until bubbly and the top is golden brown.
