Million Dollar Chicken Casserole Recipe

During the week, there’s no easier dinner than casserole. With so many options to choose from, they’re a household staple to quickly prepare and refrigerate for days at a time and still maintain their flavor when reheated. 

My Million Dollar Chicken Casserole recipe is no different, it’s easy to make with common ingredients like a rotisserie chicken, cheddar cheese, cream of mushroom soup, and a few common spices.

All of these ingredients combined create the definition of a comfort food that your family will love. Pop this one in the oven and serve with your choice of greens or side dish!

Ingredients Needed

  • Chicken breast – Any cooked chicken works, I recommend rotisserie chicken for extra flavor.
  • Cream cheese – Sub full fat, reduced fat, or fat free. Can also use cottage cheese, ricotta, or greek yogurt.
  • Cottage cheese – If you aren’t able to find cottage cheese, replace with Ricotta.
  • Sour cream – Full-fat sour cream is highly recommended in order to keep the flavor, or substitute with low-fat or fat free.
  • Cream of chicken soup Can substitute with cream of celery or onion. 
  • Cheddar cheese – If need be, substitute cheddar cheese with American cheese, which has a similar but milder flavor.
  • Garlic powder – If you don’t have it, substitute garlic powder with an equal amount of minced garlic.
  • Onion powder – Replace with minced onion if you prefer.
  • Melted butter – Unsalted is best.
  • Ritz butter crackers – Substitute with your favorite cracker or breadcrumbs.

How to make Million Dollar Chicken Casserole

  1. Preheat the oven to 350F. Prepare a 9×9 baking dish with non-stick spray. Chop or shred the chicken.
  2. In a large bowl combine the chicken, cream of chicken soup, cottage cheese, sour cream, garlic powder, onion powder, and cheddar cheese. Mix to combine completely.
  1. Spread the chicken mixture into the prepared 9×9 casserole dish.
  2. In a medium sized microwave safe bowl, melt butter in intervals of 20 seconds until melted. Add the crushed cracker crumbs to the butter and mix to combine.
  1. Sprinkle the cracker crumbs and butter over the top of the casserole.
  2. Bake in the oven uncovered at 350F for 30- 40 minutes or until the casserole is bubbly and the top is golden brown. Remove and serve warm. Enjoy!

Can I make this ahead of time?

This casserole is perfect for weeknight dinners because it can be made at any time and frozen either baked or unbaked.

Freeze Unbaked: Prepare and freeze before baking. When ready to cook, thaw overnight in the fridge and bake as directed.

Freeze Baked: Prepare as directed, cool completely, and freeze. Thaw overnight in fridge before reheating.

How long does it last?

The Million Dollar Chicken Casserole is similar to others in that it is typically good in the fridge for around 4 days. I recommend wrapping the top of your casserole dish in plastic wrap or an air-tight lid for the longest lasting time.

  • I love a rotisserie chicken in this! It makes prep so easy. I also prep a large batch of chicken breasts and freeze in 1 pound portions.
  • Substitute the cream of chicken soup to cream of mushroom soup, or onion, celery, or cheddar cheese soup!
  • Don’t have Ritz crackers? Use saltine crackers, corn flakes, or even bread crumbs for the crumb topping.
  • Sneak in some veggies! Add frozen peas, green beans, or corn.
  • Garnish with green onions for a pop of color!
  • Add a sprinkle of poppy seeds over the top for more flavor and texture.

  • Use saltine crackers or corn flakes for the crumb topping if you don't have ritz crackers or butter crackers.
  • Add in frozen peas, green beans, or corn for more veggies in this million dollar chicken casserole!
