Ingredients Needed

  • French green beans – Also known as Haricot Vert, replace with whole green beans or any standard green bean as necessary. 
  • Bacon – I personally prefer to choose a thick-cut bacon, but any package bacon or kind of bacon will do.
  • Butter – Unsalted is best. You can also substitute a little olive oil.
  • Light brown sugar – This can be substituted with white sugar mixed dark brown sugar. Or white sugar mixed with molasses and soy sauce.
  • Garlic powder – Replace with garlic salt or fresh garlic as necessary. 
  • Onion powder – Switch out for onion salt or fresh grated onion. 
  • Black pepper – I prefer finely ground black pepper.

How to Make Green Bean Bundle Casserole

  1. Preheat oven to 350 F. Spray casserole dish with nonstick cooking spray.
  2. Spread thin green beans in an even layer in bottom of baking dish. 
  3. On top of the green beans, place bite-sized pieces of thick bacon.
  1. In a large bowl in the microwave or a large frying pan on the stovetop, melt butter. Add brown sugar and spices, stirring to combine until majority of sugar is dissolved. 
  2. Pour sauce on top of bacon green bean bundles as evenly as possible. Cover with foil and bake for 35 – 40 minutes. Remove from oven and uncover. Drain the majority of liquid.
  3. Put back into the oven uncovered and bake for an additional 10 – 15 minutes or until slices of bacon are crispy and golden brown. Remove and serve!

How long does it last?

Place any leftover green bean casserole into the fridge in an airtight container for 2-3 days. To reheat, place bundles in the oven, air fryer, or microwave until heated all the way through.

Can I make it ahead of time?

This casserole can definitely be made ahead of time. Prepare green beans as noted in the recipe before putting in an airtight container and storing in the fridge for up to 2 days.

Leave the brown sugar mixture separate in its own container. Make sure to cut up your strip of bacon into bite-sized pieces and store in a Ziploc bag separately.

Serving Suggestions

How do I keep my green beans a bright green color?

To get a vibrant green color, use blanched green beans! You can do this yourself by boiling water and putting a small bowl of ice water off to the side.

Drop your green beans into the boiling water for a total time of around 6 minutes, then move 8-10 green beans at a time to the ice bath.

  • Worried about your casserole bubbling over and making a mess of your oven? Try placing a baking sheet or cookie sheet on the rack below your casserole dish.
  • As part of the prep work for the topping, cook uncured bacon and place it on a paper towel to soak up any excess oil. Once you have patted the piece of bacon dry with paper towels, break it into smaller pieces for your topping.
  • I recommend choosing frozen cut green beans for this recipe, rather than fresh. They stay bright green and cook well.
  • Depending on your oven, start checking the casserole at 30 minutes.
  • If the bacon doesn’t get as crispy as you would like, you can try partially cooking the bacon pieces before adding them to the top of the casserole.
  • This recipe can accommodate a lot of special diets – to make this recipe vegetarian, for example, the only change you need is to remove the bacon.
  • For a creamier consistency, add in a little cream of mushroom soup.

  • 2 cans cans french style green beans (28 ounces) drained and rinsed
  • 12 ounces bacon cut into bite-sized pieces
  • 5 tablespoons butter
  • ¾ cup light brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper

Instructions
