Tender chicken, bright green broccoli, and a cracker topping is something I can’t resist. Let’s not forget all the melted cheese!

Ingredients Needed

  • Chicken – Cooked, shredded chicken. I prefer to use chicken breasts but chicken thighs work great too.
  • Broccoli –Frozen broccoli is the easiest. If using fresh, blanch or steam beforehand.
  • Soup – Cream of chicken soup. Sub cream of mushroom or cream of onion. A cheddar cheese soup is yummy too!
  • Cheese – I like to use sharp cheddar cheese but mozzarella is also a great choice.
  • Crackers – Use your favorite buttery cracker like Ritz or Club crackers.

How to Make Chicken Broccoli Casserole

  1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or butter.  
  2. In a large bowl, mix together the shredded chicken, thawed broccoli florets, and cream of chicken  soup until well combined.
  3. Transfer the chicken and broccoli mixture to the casserole dish and spread it into an even layer.
  1. Sprinkle the crushed butter crackers evenly over the chicken and broccoli mixture. 
  2. Top with the shredded cheese.
  3. Bake the casserole in the preheated oven for 25 to 30 minutes, or until the cheese is melted, the top is golden brown, and hot all the way through.
  4. Take out the casserole and cool for 5-10 minutes before eating.

How long does it last?

Save any leftovers for up to 4 days in the fridge. Just be sure to store in an airtight container or wrap tightly with plastic wrap.

Can I freeze it?

This is a great freezer meal! When I make this I usually make a double batch and freeze one. If I am doing this, I use fresh broccoli florets. Using frozen ones, cooking them, and then freezing again can make them extra soft.

Serving Suggestions

I love that this is a super quick and easy dinner to throw together. And the fact that it has chicken and tons of veggies makes me happy that it covers all the bases.

But If you want to add something to it, I like a salad, some green beans, or even some white rice with it. Or brown rice, Whichever you prefer. Make it even easier with instant rice!

Tips for the Best Casserole

  • You can use boneless skinless chicken breasts, chicken thighs, or any cooked chicken you have on hand.
  • Grab a rotisserie chicken from the grocery store for even easier prep. It’s great for using up leftover chicken too!
  • If the casserole seems a little dry before reheating, add in a few tablespoons of chicken broth.
  • Substitute cream of mushroom soup for the cream of chicken.
  • Broccoli isn’t the only vegetable you can use. Cauliflower is a delicious substitute, and so are Brussels sprouts.
  • If you don’t have crackers, use some crushed corn flakes or panko bread crumbs instead. Mix in a little parmesan cheese for extra flavor.
