Ingredients

  • 8 frozen burritos (4 ounces each) beef preferred
  • 1 10 ounce can red enchilada sauce
  • 1 cup salsa
  • 4 ounces chopped green chilies
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 375F. Spray a 9x13 dish with nonstick spray.
  • Place the unwrapped burritos in the dish, seam side down.
  • Combine the enchilada sauce, salsa, and green chilies in a bowl.
  • Spread over the frozen burritos.
  • Cover and cook for 20 minutes.
  • Uncover, top with cheese, and bake another 10 minutes or until the internal temperature reaches 165F and the cheese is melted.
  • Remove from the oven.
  • Serve with favorite toppings like sliced black olives, sour cream, diced tomatoes, and shredded lettuce.

Notes

  • Place the burritos seam side down to keep them from opening up while cooking
  • You can use frozen chimichangas too!
  • Want to make it creamier? Substitute the enchilada sauce for a cream of onion soup.
  • Top with your favorite shredded meats like chicken or pork carnitas.
  • Crush up some tortilla or corn chips and sprinkle on top for some texture.
  • Top with sour cream for a wonderful contrast in temperature and flavor.
