Walking Taco Casserole

A walking taco casserole, which is also called a walking taco bake, combines taco seasoned ground beef with cream cheese, then layers of cheese and Frito chips.

Ingredients

  • ½ cup onion diced
  • 1 pound ground beef
  • 1 15 ounce can black beans drained
  • 1 ounce packet taco seasoning 2 tablespoons homemade
  • ½ cup water
  • 4 ounces cream cheese softened
  • 1 14.5 ounce can diced tomatoes
  • 4 ounces chopped green chilies
  • ¼ cup taco sauce
  • 1 9.25 ounce bag Fritos corn chips
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 350F. Spray a 9x13 casserole dish with non stick spray.
  • In a large skillet, cook the ground beef and onions until no longer pink. Drain if desired.
  • To the pan with the onions and beef, add the taco seasoning and water. Cook for 2-3 minutes to get the flavor of the seasoning in the meat.
  • Add the drained black beans, diced tomatoes, chopped green chilies, cream cheese, and taco sauce. Stir to combine.
  • To the bottom of the baking dish, add half the corn chips.
  • Top with the meat mixture and spread into an even layer. Top with cheddar cheese.
  • Cover with foil and cook in the oven for 20 minutes.
  • Uncover, top with remaining corn chips. Bake uncovered for another 5 -10 minutes or until the edges are bubbly and the cheese is melted.
  • Remove from the oven. Let cool for a few minutes.
  • Add your favorite toppings and serve. Enjoy!

Notes

  • Drain the wettest ingredients during the preparation. That way you don't end up with a super soggy casserole.
  • Pre-heat your oven before popping the casserole dish in there. This ensure that your cooking time does not become an extended version of "Is it ready yet?"
  • Spray the bottom of your casserole dish first with a cooking spray or light brush of oil to prevent sticking. It also helps crust the bottom a bit, for some, that is the best part!
  • Use the right size casserole dish for the job. A 9x9 or a 9x13 dish with at least 2 inch depth is ideal. However, you can also use a cast iron pan if you prefer.
