Ingredients

  • 1 pound ground beef
  • 1 cup sweet onion diced
  • 1 green bell pepper seeded & diced
  • 1 cup sliced fresh mushrooms
  • 1 cup beef broth
  • 1 brown gravy packet 0.87 ounces
  • 3 cups mozzarella cheese
  • 28 ounces frozen tater tots
  • Fresh chopped parsley for garnish.

Instructions

  • Preheat oven to 425F.
  • In a large skillet over medium high heat, add the butter and ground beef.
  • Cook until beef is almost done. Stir in the onions, bell pepper, and mushrooms.
  • Cook until the onions and peppers are softened.
  • Stir in the beef broth and gravy packet.
  • Pour into a greased 9x13 baking dish.
  • Top with cheese.
  • Layer the top with tater tots.
  • Bake at 42F for 30 minutes or until bubbly, the cheese is melted, and the tater tots are crispy and golden brown.
  • Remove from the oven.
  • Garnish with chopped fresh parsley and enjoy.

Notes

  • Brown the ground beef in a medium nonstick skillet and drain well. Be sure to season it while cooking.
  • Like more onion flavor, add a sprinkle of onion powder.
  • Try a dash of Worcestershire sauce for some kick.
  • Cook the vegetables until crisp tender. They will continue to cook when you bake it.
  • Don't have mushrooms? Substitute cream of mushroom soup.
  • Make it creamier by adding cream cheese or sour cream.
  • Replace the mozzarella cheese with provolone cheese slices.
  • Don't overcook it. Bake until bubbly and the cheese is melted. If it starts to brown too soon, cover with foil.
  • Let it rest before serving. This will help the juices distribute and make it easier to serve.
  • Garnish with fresh herbs for more color.
  • Serve it with a side salad or crusty bread.
