Preheat oven to 375F. Cook bacon in a large dutch oven over medium heat. Remove and drain on paper towels.

Add your diced onion, garlic, thyme, and sage to the leftover bacon fat and cook until tender. Add in your kale and cook for 5 minutes or until the kale is slightly wilted.
